Season: The season for the prized white truffle (Tuber Magnatum Pico) generally runs from October to December/January, with the peak in autumn (October–November). Exact dates vary slightly by region, but harvesting often begins on October 1st and ends on December 31st or January 15th, depending on local regulations, which may also be influenced by climate.

Aroma: The aroma of the white truffle is one of its most distinctive characteristics. It is complex and intense, forming the most harmonious aromatic bouquet in the world of truffles. It vaguely recalls aged Grana cheese, with notes of damp forest and a hint of garlic. If the aroma of the prized white truffle is weak or absent, it means the truffle is not sufficiently mature or is of poor quality.

Flavor: The flavor of the white truffle is intense yet well balanced; just a few grams are enough to enhance any dish. Its taste recalls aged cheese, with garlicky and slightly spicy notes, softened by hints of honey.
