The black scorzone truffle (Tuber aestivum Vitt.), also known as the summer truffle, is a hypogeous fungus characterized by a delicate aroma and a mushroom-like aftertaste. It is highly appreciated in cooking for its versatility.
Season: From May 15th to September 15th and from October 1st to March 15th, depending on regional regulations.
Aroma: It has a pleasant, delicate aroma with notes reminiscent of the forest floor and mushrooms, less intense than other black truffle varieties.
Flavor: The flavor is delicate, with notes that may recall hazelnuts. It becomes more pronounced when the truffle is gently heated.
