Uncinato Truffle

Also known as the “winter scorzone,” this is a prized autumn black truffle. It is distinguished by a black peridium (skin) with hook-shaped warts and a hazelnut- to chocolate-colored gleba with dense light veining. Its aroma is intense, with notes of hazelnut and mushroom.

Harvest season: It generally runs from October 1st to December 31st or January 31st, depending on regional regulations. Known as the “winter scorzone,” it matures in autumn, with peak quality between October and November.

Aroma: A high-quality Uncinato truffle releases a delicate scent of hazelnut, porcini mushroom, and Grana cheese.

Flavor: Delicate yet very intense, with earthy and woodland notes and, when fully ripe, hints of chocolate.
