Description
Bianchetto or Marzuolo Truffle (Tuber borchii Vittadini):
Less prized than the white truffle but still highly appreciated, it is characterized by a strong, almost garlicky aroma.
Harvest season: The harvest period for the bianchetto truffle generally runs from mid-January to mid-April. Peak ripeness—and therefore greatest availability—occurs between late February and early March.
Aroma and flavor: Unlike the prized white truffle, which has a delicate and aromatic scent, the bianchetto has a more pungent aroma and a flavor reminiscent of garlic, sometimes spicy.
